Preparation
First, preheat your oven to 100°C (210°F). Meringue needs a low temperature because it should dry slowly rather than bake and become brown.
Separate the eggs carefully. Make sure there is no egg yolk mixed with the whites because even a small amount of fat can prevent the egg whites from becoming fluffy.
Place the egg whites and salt in a completely clean and dry bowl. Start beating on medium speed until the whites become foamy. Add the cream of tartar and continue beating.
Gradually add the sugar, about one tablespoon at a time. Beat continuously after each addition. This process is important because adding the sugar too quickly can make the meringue grainy.
Continue beating for approximately 7–10 minutes, until the mixture becomes thick, glossy, and forms very stiff peaks. When you lift the beaters, the peak should stand upright without falling over. Rub a small amount between your fingers; it should feel smooth rather than gritty.
Add the vanilla essence and beat briefly to combine.
Making the Flower Shapes
Divide the meringue into several bowls if you want different colors. Add a very small amount of gel food coloring to each portion. Pastel colors work particularly well for the flowers in your photo.
Transfer the meringue into piping bags fitted with star or flower piping tips. Pipe small flowers, rosettes, swirls, and kisses onto a tray covered with parchment paper. Keep a little space between each piece.
For a flower shape, hold the piping bag vertically and squeeze while making a small circular movement. Stop squeezing before lifting the nozzle. You can make the flowers small or large depending on your preference.
Baking
Place the tray in the preheated oven. Dry the meringues for approximately 1½–2½ hours. Larger flowers may need more time.
The exact time depends on their size and your oven. They should feel completely dry and easily lift from the parchment. They should remain pale and pastel-colored rather than turning brown.
When finished, switch off the oven and leave the meringues inside until they have cooled completely. This helps prevent them from cracking or becoming sticky.
Storage
Store the finished meringues in an airtight container at room temperature. Keep them away from humidity because meringue absorbs moisture very easily. Properly dried meringues can stay crisp for several days.
Important tip: On a humid day, especially in a humid climate, allow the meringues to dry thoroughly and keep them sealed immediately after cooling.
These pretty flower meringues are best served as they are, but you can also use them to decorate cakes, cupcakes, ice cream, or dessert tables.
